Daniel Fast-friendly date honey is easy to make and wonderful to use as a spread or a dip for fruit.
- 1 lb Medjool Dates
- 2 cups water (plus more, if needed)
Remove the pits from dates and place all the dates in a medium saucepan. Pour the water over the dates. There should be enough water to cover the dates.
Cook the dates in water on medium high heat until the water is boiling. Turn the heat lower and simmer for about 40-50 minutes. Stir the dates every 10 minutes to make sure it's not sticking to the bottom of the pan. Add more water if necessary to maintain enough moisture.
Once the dates have broken down to a thick, chunky sauce, remove from heat. Let cool for about 5 minutes. Pour into a food processor and blend for 20 seconds or until the mixture is smooth. Cool before serving.
